Winemaker's notes:

This wine shows the rich, full-bodied character typical of this grape variety. Firm structure, generous tannins, and deep color complement classic aromas and flavors of ripe black currant, cassis, dusty cocoa and saddle leather.

An excellent companion to aged blue cheese, braised or grilled beef, and roast pork with fruit.

Blend: 84% Cabernet Sauvignon, 9% Merlot, and the remainder a blend of Malbec, Petite Verdot and Syrah

King of Red 
Many refer to Cabernet Sauvignon as the king of red grapes. Perhaps that title is due to its ability to grow worldwide in a number of climates, or to the fact that it produces wine with such character yet such diversity. Either way, this grape is responsible, as a whole or a partner, for some of the greatest wines in the world. In Bordeaux, Cabernet Sauvignon is the principle grape of the Medoc. It plays a supporting role in the blends of the right bank in regions such as St-Emillion and Pomerol. It also found a very successful home in California - particularly the Napa Valley - where it crafts the classic and cult wines of the region. However, Cabernet is a hearty grape, and has taken well to many regions: South America, Australia, South Africa, Washington State and Italy's Tuscan coast.

Notable Facts 
The Cabernet Sauvignon grape is a small berry with a thick skin and a high pip to pulp ratio. This in turn creates a wine high in color, tannin and extract. Typical Cabernet Sauvignon descriptors include blackberry, cassis, cedar and currant. Because the grape adapts to many different soils and climates, its characteristics truly reflect a sense of place. In Bordeaux you'll find the more earthy, tannic side of Cabernet, where it's typically blended to soften tannins and add complexity. In warmer regions like California and Australia, you'll frequently find ripe fruit flavors upfront. Cabernet Sauvignon crafts wines as a single varietal and as a blending partner, where it can add structure and tannins.

2009 marks the first vintage for the inclusion of Lake County sourcing in our Ghost Pines Cabernet Sauvignon blend. Lake County contributed incredible ripe fruit and a generous mouthfeel and viscosity to the overall blend. Sonoma County vineyards supplied jammy dark fruits, and Napa County vineyards were instrumental in establishing the foundation for structure and density to support Sonoma County's fruit forward characteristics. The result is our 2009 Cabernet Sauvignon, which displays aromas and flavors of plums and blackberries, with layered notes of mocha, toasted pound cake and roasted nuts. This wine has superb complexity and an aging potential up to 3 years.

Non-Vintage 
Most Champagne you encounter will be NV, or non-vintage. This is because the base wine is a blend of wine from multiple vintages. In producing non-vintage wines, Champagne houses strive to keep the taste consistent year by year, and non-vintage wine provides the winemakers flexibility in blending, ensuring a constant style each year. Non-vintage Champagne is released when it is ready, so drink within a year or two after you purchase or receive a bottle. That said, there are some stars of non-vintage that are as good as many vintage bottlings and can last a few more years. The higher priced non-vintage, or multiple vintages, like Krug's Grand Cuvée and Laurent Perrier's Grand Siecle are prestige cuvées, or tète de cuvées. This means these are the top blends from the house, and of no less quality than a vintage Champagne. Krug makes no entry level Champagne, so everything you see from them is a prestige cuvée.
