Wine DOs And DON'Ts...

Here are some informative "Wine Don'ts" adapted from the Complete Idiot's Guide to Wine, which is another good read and wine resource book!

  • Don't store wine in hot places or in the sunlight.
  • Don't keep wine in the trunk of your car.
  • Don't store your wine standing up (keep the cork moist).
  • Don't fill a wineglass more than halfway (so you can swirl it).
  • Don't serve wine in new, unwashed glasses.
  • Don't pop the champagne cork. Slowly twist it and pull it off.
  • Don't serve a white wine too cold, or reds too warm.
  • Don't buy wine from the store window.
  • Don't give too much attention to wine snobs.
  • Don't assume a vintage date means good quality
  • Don't assume a cork in a bottle is a sign of good quality.
  • Don't fail to ask when you don't understand wine terminology.
  • Don't take the 100-point rating system too seriously.
  • Don't assume the words "reserve" or "classic" on a U.S. wine label have any significance
  • Don't assume all bottle-aged wine in a single case will be of the same quality.
  • Don't accept a faulty wine in a restaurant.

Tips for Visiting Wineries...

Here are some tips anyone can learn that will make your wine tasting experience even more enjoyable. A winery is not just about the wines, but about the "wine experience." We want to pass along some ways to make this wine experience a great experience. So here are a dozen of my top tips I have learned on how to have a great day wine tasting.

1.   Choose a Designated Driver. (´©°¡ ¿îÀüÀ» ÇÒ°ÍÀÎÁö ¿ÍÀÎÀ» ¸¹ÀÌ ¸¶½Ã°í ¿îÀüÀ» ÇÏ½É Àý´ë ¾ÈµË´Ï´Ù¿ä~)

2.  Don't Try to Visit Every Winery. In Temecula, we have over 30 wineries. (Çѹø¿¡ ¿©·¯±º´ë °¡½Ç·Á°í ÇÏÁö¸¶½Ã±¸¿ä µÎ¼¼±º´ë³ª ¾Æ´Ô Çѱº´ë¾¿ ÁÖ¸»¿¡ ½Ã°£³ª½É ÇÇÅ©´Ð °¡½Å´Ù´Â ¸¶À½À¸·Î °¡½É ÁÁÀ¸½Ç°Í °°¾Æ¿ä ^^*)

3.  Don't forget Lunch. Many wineries have beautiful patios or decks where you can spread out and have a great lunch. (ÀúÈñµµ °¥ Ä¡Áî¶û Å©·¹Ä¿ ¹°µµ °°ÀÌ °¡Á®°¡¼­ ¸Ô¾ú¾î¿ä.. Ȥ »÷µåÀ§Ä¡³ª °¢Á¾ ½º³¼À» °¡Á® °¡¼Å¼­ µå¼Åµµ ÁÁÀ¸½Çµí! ÇÏÁö¸¸ ´Ù¸¥ ¿ÍÀ̳ʸ® ¿ÍÀÎÀ» °¡Á®°¡¼­ ¸¶½Ã¸é ¾ÈµÇ°ÚÁÒ? ´Ùµé ¾Æ½Ã°ÚÁö¸¸¿ä J ¿¡Æ¼ÄÏÀº ÁöÄÑÁּžß~)

4.  Drink water. A good rule of thumb is to drink one bottle of water per winery:  It's a great idea because the water keeps you from becoming dehydrated (and more intoxicated) by the wine. (¹°Àº ²À ÁغñÇϽñ¸¿ä~)

5.  Avoid wearing perfume or cologne. (´ç±Ù ¾Æ½Ã°ÚÁö¸¸¿ä Àڱسª´Â ³¿»õ´Â ¿ÍÀÎÀÇ ÇâÀ» ¹æÇØÇÑ´ä´Ï´Ù)

6.   Go through the actual tasting process. Typically, you want to taste from light white to heavy reds, leaving the sweet wines to the end. The saying is "white before reds and dry before sweet." If you drink a dry wine after drinking a sweet wine it will usually just taste bitter. And when you taste, do not forget the process:

1.   SEE: Look at the wine against a white surface. Is it colorful or brownish? Key word is "clarity."(¶Ô¾îÁö°Ô Çѹøº¸½Ã°í~)

2.  SWIRL/SMELL: Hold the glass by the stem, always. Then swirl your glass to aerate the wine (getting air into the wine). Swirling opens up a wine and releases those aromas and flavors. (¿ì¾ÆÇÏ°Ô ¿ÍÀÎÀÜÁ» Èçµé¾îÁֽðí~ ¾î¶² ³¿»õ°¡ ¼û°ÜÁ® ÀÖ´ÂÁö~)

3.  SLURP: You can either just taste, or many like to slurp. Take a small taste and while the wine is in your mouth simply breathe (¾Æ½ÃÁÒ? ¿ÍÀÎÀ½¹ÌÇϱâ!!¿ÍÀΰú µöÅ°½ºÇѹø Çغ¸»ï~)

7.   To rinse or not to rinse. You do not have to rinse between tastes. I have read that rinsing between tastes actually waters down the next taste. Plus water ruins a healthy Ph balance in a glass that wine leaves for the next taste. The only time I would rinse would be from a red wine to a dessert white wine, so that the white wine does not look pink. (±¸Áö ´Ù¸¥ ¿ÍÀÎÀ» ¸¶½Ç¶§¸¶´Ù ÀÜÀ» ¹°·Î ¾ÄÀ¸½Ç ÇÊ¿ä´Â ¾øÀ¸¼¼¿© Àü ·¹µå¿ÍÀÎ ÈÄ ¿ÍÀÕ¿ÍÀθ¶½Ç¶§ Çѹø?)

8.   Don't finish wines you don't like. If you try a Cabernet, and it is too tannic or acidic, pour the rest out. Every tasting bar has a dump bucket for just this reason. If you want to just taste a particular varietal or just reds or whites, you can do that.(½È¾îÇϽô ¿ÍÀÎÀº ¸¶·ÃµÇ¾î ÀÖ´Â Åë¿¡ ¹ö¸®¼Åµµ ¾Æ¹«µµ ¸ð¶óÇÒ»ç¶÷ ¾øÀÀ²¾¿ä~)

9.  Don't finish every good wine. (Àü ¸¶À½¿¡ µå´Â ¿ÍÀÎÀº ¿ø¼¦~ Çß¾ú¾î¿ä ¤»¤» ÇÏÁö¸¸ ´Ù¸¥ ¿ÍÀ̳ʸ®¸¦ ¶Ç °¡½Ç °èȹÀÌ½Ã¸é ¹è¸¦ ü¿ì½Ç ÇÊ¿ä´Â Àý´ë·ç¡¦)

10.              Use the crackers. The bread and crackers are there to refresh your pallet so one taste does not blend into another taste. Don't gobble a plate or bowl of them, just take a bite between tastes so your pallet is set-up and ready for the next wine. (Å©·¹Ä¿°¡ ÀÔ¸ÀÀ» Á¤¸®ÇØÁ༭ ´Ù¸¥ ¿ÍÀÎÀ» »õ·Î¿îÀÔÀ¸·Î ¸¶½Å´Ù´Â »ý°¢À¸·Î¿ä~)

11.              Ask questions. Once you're get to the tasting bar, don't be a passive taster, who just stands there and says nothing. Engage the wine server. They are excited about the wines and want to share that excitement with you. Remember, a winery visit is about the full experience, not just the wines. Ya never know, the servers may pour you a wine that is not on the menu, or better yet, do some barrel tasting. Connect with the servers and they will likely remember you the next time you visit. I typically like to ask the servers what wineries THEY like to visit, so I get the inside scoop of a region I am unfamiliar with.
