안녕하셨어요~ 벌써 몇주가 휘~휙 하면서 바람에 날라간마냥 순간처럼 지나갔네요 ㅠ.ㅠ

그동안 잘 지내셨나요?  졸업씨즌이라서 더 바삐 지나간거 같네요 :)

오늘은 지난 5/5 에 있었던 와인클럽을 "야기!' ㅎㅎ 하러들어왔어요.

저희 와인클럽이 항상 금요일에 있기에 이날은 스페셜하게 보내기 위하야~

요새 식당에 가면 "Brasied beef"를 메뉴에서 쉽게 접하실수 있을꺼예요 :)

뭐 우리말로 하면 일명 "갈비찜" 아니겠습니까요...ㅎㅎ

갈비찜을 매인으로 정하고 와인을 골라봤는데요.

한번 준비했던 내용 조심스레 올려보니 부족하더라도 우리 미씨님들의 너그러운 마음으로

이쁘게 봐주십삼~ ^^*




제가 인터넷에서 읽은 내용을 정리해서 올려봅니다~
대체적으로 cab 이 잘 어울리지만 이번에는 말백으로 시음을 같이 해봤습니다.


5/5/17 FRIDAY WINE CLUB PAIRINGS FOR BRAISED BEEF SHORT RIBS:


·         A deep, hearty red wine will compliment this dish nicely – Try a Cabernet Sauvignon, Cabernet Franc or a Zinfandel.

What To Drink With The Short Ribs:

 

 Recently I had the pleasure of meeting Felipe Stahlschmidt, chief winemaker at Pascual Toso, one of the oldest wineries in Argentina.  For over 125 years, the winery has been producing high-quality, terroir-driven wines, both white and red.  Over a dinner paired with several of them, Felipe talked about the winery's commitment to making premium wines from the best vineyards in Mendoza.  For these short ribs I am recommending three of the Pascual Toso Malbecs which I tasted and thought were exceptional wines.  All of them, while unique in their own way, have distinct herbal (thyme, mint, rosemary) savory qualities to back up the big, powerful Malbec fruit on both the nose and the palate.  They are an ideal match with the earthy, rich and slightly sweet flavors in the short rib dish. Following are the wines, along with descriptions from the winery.  These wines are readily available, just go to www.wine-searcher.com to find out where.

  • Pascual Toso Estate Malbec 2014 ($13.99) - "This Estate-grown Malbec reveals a fruity nose filled with plum and quince aromas and a slight touch of elegant oak.  The mouthfeel is full with flavors of blackberry and licorice, and has a rich and lingering finish, with smoky accents of vanilla and oak".  This Malbec is an excellent value and would add a lot of flavor to the short rib dish if used in the recipe.

  • Pascual Toso Reserva Malbec 2014 ($24.99) - "Ripe plums and raspberry fruit are the first aromas to reach the nose on this dark red Reserva Malbec.  Slightly toasted, gentle tannins, as well as spice and chocolate, join the aforementioned fruits on the palate.  This wine finishes long, lingering and focused".

  • Pascual Toso Alta Malbec 2013 ($49.99) - "A special wine which has been made with grapes from sixty year-old vines.  It presents slight hints of violet and a fruity nose and evokes blackberries, spices and tobacco.  This Malbec will leave you with a rich and lingering finish".  This Malbec, with it's intense smokey, fruity and spicy aromas and flavors would pair wonderfully with the rich flavors of the short rib dish.

·         Luscious, melt-in-the-mouth short ribs call for robust reds.

·         Luscious, melt-in-the-mouth short ribs call for robust reds, but much like the Bacon Cheeseburger D’oh Nut, pairing overly rich, palate-coating wines with one of the world’s fattier cuts of meat is just gross. Instead, look for full-bodied reds that have enough acidity to keep your palate refreshed. Here, a few bottles under $17 to try.

Southern French Reds. 
The rustic Grenache-based blends made in regions such as the Southern Rhone, Provence and the Languedoc are made for braised meats. They offer spicy fruit and coarser tannins that become soft and delicious with richer dishes, like short ribs. One affordable producer to look for: Mas de Gourgonnier. Domaine Charvin from Châteauneuf-du-Pape and Canet-Valette from Saint-Chinian also make reliable bottles.

·         Chilean Cabernet Sauvignon.
When served blind, wine geeks often have a hard time pegging Chilean Cabernet. They have some of the rich fruit of California wines with a bit more structure (tannins and acid), like Bordeaux. That combination makes them great with short ribs. Look for bottles from Peñalolén or Mapuche.

·         Sangiovese from Tuscany. 
Sangiovese, grown in Tuscan subregions such as Chianti, Montepulciano and Montalcino, is too often reserved for pizza and pasta. Yes, super-cheap Sangiovese are best saved for lighter food, but pay a few more dollars and you’ll be rewarded with serious reds that have bright cherry fruit and smoky, herbal notes—delicious with beefy short ribs. Try wines from Mastrojanni in Montalcino, Fèlsina in Chianti or Avignonesi in Montepulciano.

Called “extra dry,” “sec,” “demi-sec,” or “doux,” depending on the sweetness of the dosage (a blend of sugar and wine added just before corking).


Tastes like: Apple, pear, creamy citrus, berry, and yeast flavors.


Great with: Cheesecake, custard-fruit tarts, apple pie, buttery-crusted desserts, pumpkin pie, and English toffee.

Recommended bottles:

  • Mum­m­ Napa “Cuvée M” nonvintage (Napa Valley). Toasty yeast and spicy apples followed by vanilla-laced peaches and pears.
  • Dom­aine Ste. Michelle Extra Dry Nonvintage (Columbia Valley). A pleasant bargain—yeasty pear aromas and toasty apple flavors.
  • Schram­sberg Crém­ant Dem­i-Sec 2004 (Napa, Mendocino, and Sonoma Counties). This is your pumpkin pie wine— hints of warm spices mix with apricots, ripe peaches, and honeysuckle blossoms.

Pascual Toso Malbec Reserve ($19.99 Total Wine)

 

When in the mid 1880s Pascual Toso set out towards Argentina from its home town, Canale D’Alba, in Piamonte, Italy, he could not have imagined that he would become the founder of a winery, which is today one of the oldest and most prestigious wineries in Argentina.   When he arrived in Argentina, he settled in Mendoza. As he had been closely involved in the development of his family wine business in Piedmont, he promptly saw the promising future for winemaking in the region and decided to use his expertise. Thus, in 1890, Pascual Toso established his first winery in San José, Guaymallén.   At the beginning of the 20th century, he decided to expand his business and acquired vineyards in Maipú. At his estate “Las Barrancas”, he built another winery, “Las Barrancas” (small Canyon) which is dedicated to producing and growing the finest grapes.   In 2001, the Bodega hired as winemaker consultant to Mr. Paul Hobbs for a new high quality wine project. He has been working head to head with our chief winemaker, Rolando Luppino, on the development of premium and super-premium wines. Today, Pascual Toso still makes wines of high quality under the most exigent procedures and rules. The Trophy for Best Argentine Producer awarded by the IWSC (London) in 2007 reflects this commitment to quality.

This Chateauneuf-du-Pape wine has received good scores from various critics: the 2012 vintage was given a score of 95 by Wine Spectator.

  • This is priced around average for red wines from Chateauneuf-du-Pape. The price has been stable over the past year.

*이 와인은 거금을 주고샀는데요 ㅠ.ㅠ 맛이 살짝 corked된건지... 95점수를 받은 와인이라 기대만땅으로 오픈했건만   실망....아님 ...저희 입맛이 저렴한 $20대 와인에 친숙해진건지.... o_O
