Ingredients

4 oz unsalted butter (1/2 cup), softened to room temp
4 oz light brown sugar (1/2 cup)
3 1/2 oz sugar (¾à 1/2 cup)
1/2 oz vanilla extract (1 tbsp)
2 tsp salt
1 3/4 tsp baking powder
1 tsp baking soda
2 eggs
10 oz AP flour (2 1/4 cup)
15 oz chocolate chips (2 1/2 cup)
8 1/2 oz walnut pieces or pecan pieces or you can omit this if you have nut allergies (¾à 1 3/4 cup)

Direction

1. Combine butter, light brown sugar, white sugar, vanilla extract, salt, baking powder, and baking soda (if you have nutmeg, add a pinch of it, if not you don't have to) in a bowl (if you have a stand mixer, with a paddle attachment. if you don't have a mixer, no worries, you will get some arm workout. I don't own a mixer.)

2. Mix on low to moisten, then increase speed to medium and beat until soft, fluffy and pale, about 8 minutes (if no mixer, use your whisk and wooden spoon to mix till the batter looks as described. it may take up to 20 min. it takes me about 12 min). Make sure to scrape the bowl and beater. With a mixer running, add eggs one at a time, letting each incorporate fully before adding the next. Reduce speed to low, then add the flour all at once. Once flour is incorporated, add chocolate chips and nuts, and mix till dough is even (this will hurt your arm but worth it).

3. Divide dough into 8 equal portions and round each into a small ball. if you are not going to bake straightaway, wrap in plastic and refrigerate at least 12 hours before baking. if well protected fro air, the dough can be kept in the fridge up to 1 week. 

4. Preheat the oven to 350. Line a cookie sheet with parchment paper. Put four portions on prepared pan. If you want, you may sprinkle it with kosher salt to taste.

5. Bake until cookies are puffed and lightly brown, about 22 minutes or so.
